For an all-knowing-sort-of-entity, she doesn't seem to do such a great job at handing out boons to people that will use them wisely.

Ah, but she's deliberately limited herself so that she's not all-knowing while on Furrae, that was one of the rules she set when she started this game. Something that irks her if you'll remember from when she visited the Fae realm last.

Hmm ... looks like fae really have no control over these boons once granted. So how many can they grant / what limitation, if any, exists on them?

Eh...complicated. As has been said may times, Fae are crazy overpowered. As put in one strip, they've effectively got infinite lifespans, with near infinite power and omniscience, and are multidimensional by nature. To stave off boredom they impose limits on themselves that they follow with obsessive devotion. Mab's lack of omniscience on Furrae is one such example.

From what we know of boons, it seems less that the Fae have "no control once granted" than it is that they effectively write their friends a blank check that they can redeem however they see fit, at least up to and including the recipient's valuation of the world. So when Jyrras told Mab it would "mean the world to him" if she could get rid of the Fae bangles Albanion put on him, he was effectively redeeming his boon (though he did not know it), thereby wasting it. Had he not done so, he likely would have used that boon to resurrect Abel after Hizell killed him. Hence Pip intervening to make sure Abel survived.

So in summation: it is perhaps easies to think of a boon as a single wish from a genie. You can use it on practically anything, but once you invoke it (intentionally or by "saying the magic words"), it will be granted. No substitutions, exchanges, or refunds.
